Welty on Wednesday: Wine Festival and Onion Pie

The day has been as beautiful as a day could possibly be.  The poster announcing the Wine Festival brought thoughts of the rolling hills of a vineyard, the air laced with lavender, the sky as blue as the morning glory, scattered with confection clouds…

Well, probably none of that ever happened, but this is my story right?  You are probably wondering what any of this has to do with onion pie, what even is onion pie?

I learned about this recipe while taking a seminar on “Welty and Politics” at Millsaps College this spring.  One of my class members made it for a gathering of the group honoring our professor.  I thought it was tasty and so when I was presented with an entire bag of vidalia onions (from the hospital where Mr. Doctor works), I needed to come up with a way to use them. Voila, Onion Pie!

The recipe is found in the Junior League of Jackson’s cookbook Southern Sideboards,and is submitted by Miss Eudora Welty.

The tagline under the recipe reads:

This is a recipe Katherine Anne Porter gave me, which she got in France; these little pies are served hot at the wine festivals along with the bottle of wine.

Now, I have a confession.  I really, really thought that I had taken a picture of that first onion pie but cannot find it anywhere.  So, the delay of this post is due to the fact that I had to make another onion pie today.  This is a fairly time consuming task what with frying onions to a “nice brown, really brown and much reduced”.  And all the folding in “gently, till perfectly mixed”.  Never mind the making of the crust, which I did not do and am admitting it, thank you Pillsbury!
