I want to tell you about one of the gifts I received this year.  A friend and neighbor was able to procure some olive oil from Casa Caponetti in central Italy.  Their son, a talented chef, spent some time there as an intern and while visiting they were able to enjoy olive oil from the first pressing of the day.  The coveted gift of olive oil was accompanied by fresh oranges harvested from their friend’s tree and a bulb of fennel…


there was a note attached with a story giving directions:

“The farm was producing oranges and fennel while we were there and on the table each evening was a big bowl full of thinly sliced fennel bulb rings and thin slices of peeled oranges.  At the table (and not a second sooner!), the oranges and fennel were lightly tossed with the olive oil.  Once we were served the fennel and orange salad, a bowl of high-quality sea salt was passed around.  We were encouraged to put a very small amount of the salt on our salad.  It was a simple farm salad to them.  To us it was heavenly.”

Well, it was heavenly to us also and enjoyed prior to our Christmas luncheon.
